Learning a new language makes students reconstruct their perception of teaching. As learning a new language is learning a new way of thinking, their perception of what teaching is expands because of the new language. Furthermore, the new language gives them this new notion that teaching is something different from what they have had experienced in the past. These pasts experiences reconstruct or transform as they get more in contact with language. This means that the experiences they are experiencing while learning the new language allow them to reconstruct this perception of what teaching is.

I can observe how the writer uses the "theme and the rheme to connect the ideas throughout the paragraph, among other details (the lack of synonyms,etc)

There is repetition of various forms of the word "experience" as well as an extra "s" in the word "past". Perhaps a different word for "expands" would work better.
